Cous Cous Salad

Something my hubby likes to put together for a quick meal with little to no prep work, cook time or finesse. Still, it’s an amazingly delicious result!

Ingredients

Courgette
Yellow/ Red peppers
Aubergines
Green beans
Tomatoes
Cous cous
Cumin/ Herbes de Provence
Salt and Pepper

Method

  1. Saute/ Grill vegetables together and mix in with cooked cous cous
  2. Drizzle balsamic vinegar over mixture
  3. Scatter with pine nuts and torn basil
