My husband made this for me back in 2012 for my 26th birthday. I still think about eating this meal and how it made me feel on a daily basis.
Ingredients (For 2)
Roast Lamb Marinade:
Salt and pepper
Cous Cous Salad:
Courgette, Yellow pepper, Red pepper (Chop into 1/2 cm dice)
50ml cous cous per person
1 aubergine per person
- Roast aubergine until skin is crispy. Peel.
- Blend all puree ingredients together.
- Grill/fry lamb.
- Saute vegetables for Cous Cous and mix together with lemon and herbs. Season with salt/pepper to taste.
