Lamb w/ Cous Cous Salad & Aubergine Puree

My husband made this for me back in 2012 for my 26th birthday. I still think about eating this meal and how it made me feel on a daily basis.

Ingredients (For 2)

Spice Mix:

Roast Lamb Marinade:
Tomato puree
Dijion Mustard         
Lemon Juice         
Spice mix         
Salt and pepper         
Olive oil

Cous Cous Salad:
Courgette, Yellow pepper, Red pepper (Chop into 1/2 cm dice)        
50ml cous cous per person         
Coriander leaf         
Lemon juice         
Olive oil

Aubergine puree:
1 aubergine per person
Spice mix         
Tomato puree         


  1. Roast aubergine until skin is crispy. Peel.
  2. Blend all puree ingredients together.
  3. Grill/fry lamb.
  4. Saute vegetables for Cous Cous and mix together with lemon and herbs. Season with salt/pepper to taste.
