Onion & Nori Fritatta w/ Caramelized Mushrooms

Nori sheets
Soy Sauce
Ponzu sauce
Spring onions
Pickles (Homemade)
Sesame seeds


  1. Caramelise mushrooms in frying pan
  2. Slowly sweat onions in covered pan with soy sauce
  3. Beat eggs with mirin and soy sauce
  4. Layer onions, eggs, nori and mushrooms in a baking tin.
  5. Bake until puffed up.
  6. Top with chopped spring onions, cucumbers, pickles and sesame seeds.
