Rocket, Spinach & Walnut Pesto

When we make this again, I’ll be sure to (1) have Ian take the photo and (2) immediately get this one out!

Ingredients

Fresh rocket and spinach leaves (4:1 ratio)
Walnuts
Pecorino Romano
Olive oil
Salt
Apple cider vinegar 

Method

  1. Get your ratios right when putting ingredients into your food processor. (Be sparing in the beginning with the olive oil & salt.)
  2. Blend it all up in the processor. Add salt to taste and olive oil according to how you like the consistency of your pesto!
